Because lemons are available year round, this recipe is a must in my kitchen. You can use the vinaigrette to dress a salad, or marinate some chicken. It also makes a great hostess gift next time you want to share your kitchen skills. For some variety you can try adding your favorite herb, just clean, chop and add.
Lemon Vinaigrette Dressing
Lemon Vinaigrette
Juice of 2 lemons, ½ cup
1 cup extra virgin olive oil
Pinch of sugar
Pinch of salt and pepper
Combine all ingredients in a jar and shake until well blended.
Option:
1-2 Tablespoons fresh chopped dill, basil or thyme
